残毒积累有毒污染物在人和生物体内残留和蓄积的现象。在人和生物体内残留和蓄积的有毒污染物主要是金属、农药等。在中国部分地区所作的调查表明，在农作物、禽肉、蛋、茶叶、水产品中都有农药残毒（见农药残留）。如有机氯农药DDT和六六六,在某些地区的农副产品中检出率可达百分之百，有的甚至超出国家标准几倍以至几十倍。DDT和六六六可在人体脂肪中积累,在人乳中也有残留。金属毒物比较稳定,进入生物体后,除随排泄物（尿、粪等）排出一部分外，其余则在体内积累引起危害。鱼在含汞废水中存活时间越长，体内汞含量也越多。经测定,1龄鱼每公斤含汞约250微克，至12龄时则为600微克。鱼类肌肉组织中可富集汞达数千倍。农作物体内汞的积累主要是通过根部从土壤中吸收。据测定，谷粒的单位容积汞含量为谷壳＞糙米＞白米。水稻生长期施用有机汞农药时间越早,糙米中残留量越少；用药次数越少,残留量也越少。有人用中子活化法分析博物馆中保存的鸟类羽毛中汞的含量，发现吃种子的鸟类羽毛中，汞含量是与人们处理种子使用甲基汞杀菌剂的时期相关连的，即开始使用甲基汞杀菌剂时，羽毛中汞含量开始增加，大量使用甲基汞杀菌剂时，羽毛内汞含量则明显增多。镉经呼吸道和消化道进入动物体内，排泄极慢，可长期蓄积。日本因镉慢性蓄积中毒而致死者，经组织分析,肋骨中镉的残毒积累为11472ppm，肝为7051ppm，肾为4903ppm。蚌、螺等水生生物能富集重金属和放射性物质。瓣鳃类对有机氯农药有很强的富集能力，因此有人认为这类动物是有机氯农药污染的理想检测器。瓣鳃类还对一些放射性物质有很强的亲和力，能在体内积累周围环境中含量极低、不易检出的同位素磷、锶、硒。污染物的性质和浓度，生物本身的特点和环境的理化因素均能影响残毒积累。如鱼类的种类、大小、性别、性周期、生活季节、食性和脂肪含量等对残毒积累有明显影响。此外鱼体残毒积累还与水体的温度、溶解氧量、含盐量等有关。常见金属污染物的残毒积累见表1。联合国粮食及农业组织和世界卫生组织都设有专门机构，定期举行国际会议，制订和修改农药毒性残留标准和安全使用标准。许多国家也设有专门研究机构研究农药及其他有机化合物和重金属在动、植物体内的残留。中国从50年代开始进行这些方面的研究工作。世界卫生组织和联合国粮食及农业组织等有关机构对一些农药的允许残留量作了专门规定,如表2。参考书目湖北省水生生物研究所：《环境保护生物监测与治理资料汇编》，科学出版社，北京，1978。M.A.Q.Khan, J.P.Bederka Jr.，Survival in Toxic Environments,Academic Press,New York,1974.
